Recipe: The Perfect Sandwich Loaf

The last few days saw me heading west, to the Gower, to spend some time with my family who are on holiday. What a glorious stretch of coastline. We are so lucky to have these beauty spots on our doorstep in South Wales and when the sun shines as it did for us, you really would struggle to find many nicer places!

What’s the only thing to eat when you’re at the coast? Fish and chips!! Well for me it is anyway and the only accompaniment needed is the perfect white sandwich loaf. Which is exactly what I took with me. So I thought for my first recipe blog, I’d share my recipe with you…


  • 500g strong white bread flour
  • 10g salt
  • 10g caster sugar
  • 25g unsalted butter
  • 10g fresh yeast / 7g fast acting yeast
  • 160ml lukewarm water
  • 160ml lukewarm milk


  • Preheat your oven to 240C or as hot as it will go
  • Weight out all of your dry ingredients into a bowl

  • Mix, to bind all the ingredients together
  • Turn out onto a clean surface and knead for 10 minutes, place back into the bowl and cover

  • Leave until the dough has doubled in size

  • Remove from the bowl, knock back the dough and shape to fit the tin

  • Leave for an hour or until the dough has risen to the top of your tin
  • Bake at 240C for 10 minutes then turn the oven down to 200C and bake for a further 20 minutes
  • Remove from the tin and leave to cool on a wire rack

At this point there was supposed to be the perfect picture of fish, chips and a buttered slice of my bread, however I got a little carried away and only remembered to take a picture at this stage of the meal……
